Just because your diet at The Hernried Center is based on meal replacements doesn’t mean you can’t enjoy what you eat! Here are some simple, delicious recipes to keep your meals varied and interesting.

 

Strawberry Kiwi Frappe

  • 8 oz. strawberry kiwi sugar free sparkling water
  • 1 packet of vanilla or strawberry New Direction meal replacement

Combine meal replacement and soda gently but thoroughly (trying to save the bubbles) and pour into ice cube trays. Freeze until slushy. Empty cubes into blender and blend until broken up and texture is smooth.

 

Créme Mocha

  • 6-8 oz. espresso (cold)
  • 1 packet of chocolate pudding New Direction meal replacement

Mix 6 oz. of espresso into one packet of chocolate pudding, mix thoroughly. Add the extra two ounces if you prefer a softer consistency. Allow to chill before serving.

 

Tropical Sunset

  • 1 packet of strawberry New Direction meal replacement
  • 4 ice cubes
  • 1/2 cup strawberry sugar free sparkling water
  • 4 oz. diet orange soda

Mix 1/2 packet of strawberry with 2 ice cubes and 4 oz. strawberry flavored sparkling water, and set in freezer. Mix remaining meal replacement, 2 ice cubes and 4 oz. diet orange soda. Pour on top of strawberry mixture and swirl them together.

 

White Grape Frostie

  • 1 packet of vanilla New Direction meal replacement
  • 3-5 ice cubes
  • 8-9 oz. white grape sugar free sparkling water

Mix 1/2 packet of vanilla meal replacement in blender with 3-5 ice cubes and 4 oz. (1/2 cup) white grape sparkling water. Blend to a slush, add remaining meal replacement and another 4-5 oz. sparkling soda. Blend to a frappe consistency. An interesting “chardonnay” taste can be achieved by adding a squeeze or twist of lemon.

 

Café Crème Frappe

  • 1 packet of vanilla New Direction meal replacement
  • 1 can A&W diet sparkling vanilla soda
  • 1 tsp. instant coffee crystals

Blend the meal replacement and the coffee crystals with 1/2 can of soda plus 3-5 ice cubes, then add the other 1/2 can and blend again briefly.

 

Mini Muffins

  • 2 packets of chocolate New Direction meal replacements
  • 1/2 – 3/4 cup liquid (diet soda, water*)
  • Pam® cooking spray

Mix the meal replacement and liquid to a batter consistency, spray mini-muffin tins with Pam, fill each cup halfway with batter, bake at 350 degrees for approximately 20-25 minutes (check on them!).

*Word has it they are much drier if you use water than if you use soda.

 

Pullet Surprise (Faux Cornbread)

  • 1 packet of chicken soup New Direction meal replacement
  • 10 tsp. water or reconstituted bouillon

Mix the chicken soup with approximately 10 tsp. of water or reconstituted bouillon. Put in a cup or bowl with high sides, cover with a paper towel and microwave on high 30-60 seconds, or until just done in the middle. Will become firmer as it cools, so don’t overcook!

 

The Classic Atomic Age Muffin

  • 1 packet of chocolate, hot cocoa or vanilla New Direction meal replacement
  • 10 tsp. water

Combine your choice of supplement flavor with approximately 10 tsp. water to make a batter the consistency of brownie mix. Place in a high-sided cup or bowl so it will rise a little, and microwave on high for 30-90 seconds.

You have to figure this part out for your own microwave. Altering baking time can yield pudding, soufflé, a soft muffin or a very crunchy biscotti!

 

Chocolate Caramel Batter-Up

  • 1 packet of chocolate pudding New Direction meal replacement
  • 1/4 – 1/2 cup water
  • 1 tbsp. Torani® sugar free caramel syrup

Mix with spoon and serve. If you want a thicker brownie batter consistency, use less water.

 

Scrambled Egg Chicken Style

  • 1 packet of chicken soup New Direction meal replacement
  • 1/2 cup water
  • Pam cooking spray
  • Dry herbs to flavor

Mix ingredients in a bowl. Spray Pam on approximately 4×6 in. microwave safe dish. Pour ingredients in dish and cook in microwave for 2 minutes. Stir halfway through. Scramble with fork. Should be consistency of scrambled eggs when done.

 

Root Beer Shake

  • 1 packet of vanilla pudding New Direction meal replacement
  • 1 can diet root beer
  • 2 cups ice

Blend until all the ice has been crushed up.

 

White Cake Fruity Batter

  • 1 packet of vanilla pudding New Direction meal replacement
  • 1 Fulfill mixed fruit fiber
  • 1/3 cup water

Mix with a spoon.

 

Pumpkin Pie Pudding

  • 1 packet of vanilla pudding New Direction meal replacement
  • 1/3 cup water
  • 1/4 tsp. pumpkin spice

Mix to the consistency you prefer.

 

Vanilla Smoothie

  • 1 packet of vanilla New Direction meal replacement
  • 3-5 ice cubes
  • 1 can of Diet A&W Cream Soda

Put 1/2 packet of vanilla in the blender with 3-5 ice cubes and 1/2 a can of A&W diet crème soda. Blend to a slush consistency, add the rest of the packet and soda, and blend until mixed.

 

Black Cherry Frost

  • 1 packet of vanilla New Direction meal replacement
  • 1 can Diet Dr. Pepper®
  • 3-5 ice cubes

Put 1/2 packet of vanilla in the blender with 3-5 ice cubes and 1/2 a can of Diet Dr. Pepper. Blend to a slush, add the rest of the meal replacement and soda, and blend until just mixed for a frappe, or longer for a milkshake.

 

Pudding Pops

  • 1 packet of chocolate or vanilla pudding New Direction meal replacement
  • 6-8 oz. water
  • Pam cooking spray

Mix 1 packet of chocolate or vanilla pudding thoroughly with 6-8 ounces of cold water. Spray plastic popsicle molds lightly with Pam, spoon pudding mix and freeze. Try diet soda, flavor packets or flavored fizz water to create new flavors, like chocolate cherry, orange crème, root beer frostie or raspberry!

 

Chicken Biscuits

  • 2 packets of chicken soup New Direction meal replacements
  • 1/2 – 3/4 cup water or bouillon
  • Pam cooking spray

Mix the meal replacements and liquid to a batter consistency, spray mini-muffin tins with PAM, fill each cup halfway with batter, bake at 350°F for 20-25 min. Check on them! You can create a quiche-like consistency with more water and less baking time, or a muffin with a little less water.

 

Faux Crepes au Chocolat.

  • 2 packets of chocolate New Direction meal replacements
  • 1/2 – 3/4 cups liquid (diet soda, water, coffee)
  • Pam cooking spray

Mix the meal replacements and liquid to a pourable batter (not too thin). Pour pancakes onto cookie sheet sprayed with Pam, bake at 350°F for 10-15 minutes, remove from cookie sheet before cold.

 

Lemon Delight

  • 1 packet of vanilla New Direction meal replacement
  • 1 medium lemon
  • Pam cooking spray

Squeeze lemon for juice and mix juice with vanilla meal replacement. Zest lemon peel to taste. Add a small amount of water to lemon zest and microwave until boiling. Drain and fold into cookie dough. Spray a plate with non-stick spray. Drop tbsp. droplets of cookie dough onto plate. Cook in microwave until cookies set.

 

Classic Creamsicle

  • 1/2 packet of pineapple apricot New Direction meal replacement
  • 2-3 ice cubes
  • 1/2 can diet orange soda

Blend all ingredients in a blender to a slush consistency, add the rest of the meal replacement and the rest of the soda and blend just until mixed.

 

Orange Spice Surprise

  • 1 packet of vanilla New Direction meal replacement
  • Pumpkin pie spice
  • 1 packet of orange fiber gelatin
  • Small amount of water

Mix the vanilla with a sprinkle of pumpkin pie spice to taste, 1 packet of orange fiber gelatin, and a small amount of water. Blend well. Drop tbsp. droplets with a wet spoon onto a plate. Cook in microwave until cookies set.

 

Piña Smoothie

  • 1/2 packet of vanilla New Direction meal replacement
  • 2-3 ice cubes
  • 1/2 can of diet orange or peach soda

Combine all ingredients in the blender to a slush consistency. Add the rest of the meal replacement and soda, blend until mixed. Serve immediately.

Variations: use 12 oz. of calorie-free “fizz water” (available in most markets) in tropical, mango, lime or similar flavors. Do not use juice/water drinks.

 

Cinnamon Waffles

  • 1 packet of vanilla New Direction meal replacement
  • 1 tbsp. water
  • Cinnamon

Mix together. Stir until batter is smooth. Pour batter into waffle maker. Cook until golden brown.

 

Spicy Cornbread

  • 1 packet of chicken soup New Direction meal replacement
  • 1 tsp. garlic powder
  • 1 tsp. dry mustard
  • Dash of cayenne pepper
  • Water

Mix all ingredients together. If batter is too dry, add more water. Using non-stick sandwich grill, cook until golden brown.

 

Pineapple Apricot Ginger Cookies

  • 1 packet of pineapple apricot New Direction meal replacement
  • 1/8 – 1/4 tsp. ground ginger
  • 1 tbsp. lemon juice
  • 1-2 tbsp. water
  • Pam cooking spray

Mix together all ingredients. If dough is too dry, add water, 1 tsp. at a time. Spray a plate with non-stick baking spray. Using a wet spoon, drop tsp. droplets on to plate and flatten. Cook on high until cookies are brown around the edges — just under a minute. If more cooking time is needed, cook every 10 seconds until done.

 

Snack Cakes

  • 1 packet of pineapple apricot New Direction meal replacement
  • 1 packet of chocolate supplement New Direction meal replacement
  • Small amount of water

Mix both meal replacements together with a small amount of water. Blend to a smooth batter. Using a non-stick sandwich maker, cook until brown.

 

Pudding Tarts

  • 1 packet of vanilla or chocolate New Direction meal replacement
  • 1 tbsp. water
  • 1 packet of vanilla pudding or chocolate pudding New Direction meal replacement

Mix 1 packet of vanilla or chocolate with water, about a tablespoon. Blend until smooth. Fill nonstick microwave safe shallow muffin pan about half way. Microwave on high 20 seconds at a time until golden brown.

Prepare vanilla pudding or chocolate pudding as directed. Add a small amount of pudding to the center of each tart. Chill for 1-5 minutes before serving.

 

Chicken or Tomato Chips

  • 1/4 cup water
  • 1 packet of chicken or tomato soup New Direction meal replacement
  • 2 large paper plates (shiny surface preferred)
  • Pam cooking spray

Mix water and meal replacement . Lightly coat paper plates with Pam. Split mixture evenly between the two plates.

Spread the mixture to a paper-thin consistency across each of the paper plates. Microwave for 1-2 minutes each. Use pizza cutters to cup into chips. Cool for 2-4 minutes.

 

Vanilla Cake

  • 1 lemon (zest it, then juice it)
  • 3 packets of Splenda®
  • 1 packet of vanilla beverage New Direction meal replacement
  • 1 packet of vanilla pudding New Direction meal replacement
  • Lemon Essence sugar free sparkling water

Put the juice and zest in a small bowl, add Splenda and then mix packets of shake and pudding with sparkling water. Add enough water to make a thick batter (like cake batter).

Spread 2/3 of batter on foil sprayed with Pam. Put in oven at 350°F for 12 min. When done, sides are nicely browned. Frost with rest of cake batter.

 

Pink Poodle

  • 1/2 packet of strawberry New Direction meal replacement
  • 3-5 ice cubes
  • 1/2 can Diet 7-Up® or Diet Cherry 7-Up

Blend all ingredients to a slush consistency, add the rest of the meal replacement and the soda, and blend until mixed.

 

Berry Good Ice CreamWill need to have ice cream maker.

  • 1 packet of strawberry New Direction meal replacement
  • 16 oz. diet strawberry soda or strawberry sugar free fizz water
  • 3 packets of Equal® or another sugar substitute

Mix strawberry New Direction meal replacement, Equal, and the diet soda or sugar free fizz flavored water, follow directions for your ice cream maker. Freeze for about 20-25 minutes, depending on consistency of ice cream you prefer.

 

Kentucky Mint Julep Frappe

  • 1/2 packet of vanilla New Direction meal replacement
  • 2-3 ice cubes
  • 3 oz. strong peppermint tea

Blend all ingredients to a slush consistency, add the rest of the supplement and 3 more ounces of tea, and blend until mixed.

 

Black Forest Mousse

  • 1 packet of chocolate pudding New Direction meal replacement
  • 8 oz. sugar free black cherry sparkling water

Combine pudding powder with 6-8 ounces of cold sparkling water, blending thoroughly. Mixture will foam slightly — this gives it the mousse texture.

If mixture seems stiff or concentrated, add additional sparkling water until you are satisfied. Chill thoroughly.
